I watched studio 5 yesterday and there was the cutest girl talking about "foodie" blogs. she has here own blog i haven't checked it out yet but its http://www.stephanieskitchen.com/category/breakfast
She did a recipe demo and it looked so good i had to try it! the recipe was for
Baked Apple and Cinnamon French Toast Cups
i made them for a bunch of people and everyone died over them! so so yummy. MAKE THEM!
Ingredients:
* 2 gala apples, diced (pealed)
* 4 Tablespoons butter
* 1/2 teaspoon cinnamon
* 2 tablespoons brown sugar
* 1/4 cup granulated sugar
* 8 slices French bread, cubed (day old bread is better to use)(not as soggy)
* 4 eggs
* 1 cup milk
* 1 teaspoon vanilla extract
* 1/2 teaspoon cinnamon
* dash of ground nutmeg
* 1 cup confectioners' sugar
* dash of milk
Method:
1. Preheat oven to 350 degrees. Spray a muffin tin with nonstick spray.
2. In a medium skillet, saute the apples with the butter, cinnamon, brown sugar and sugar for about 5 minutes, or until soft. Set aside to cool slightly.
3. In a large bowl, whisk together the eggs, milk, vanilla, cinnamon and nutmeg. Pour egg mixture and apples over bread cubes so they are well coated.
4. Scoop the bread pudding evenly between 12 muffin cups and bake for 20-25 minutes, or until set and golden brown. Cool for 5 minutes in the pan and transfer to a wire rack. 5. In a small bowl, whisk the confectioners' sugar and milk until smooth. Drizzle over warm bread pudding cups. Serve immediately.
